Poussin and Poussin Recipes

Poussin have a delicate texture and light, sweet flavor make them an excellent replacement in recipes for regular chicken or Cornish hen. The poussin is ready to stuff and roast or to split and sauté.
Poussin is the French word for chickens that are only 3 to 4 weeks old. Poussin weigh approximately 18 ounces and, like chicken, poussin should be cooked to an internal temperature of 165° to 170° Fahrenheit. The carry-over cooking will finish it to the appropriate temperature of 175° to 180° Fahrenheit for serving.
